I'm up to the challenge!
It's Spring Break and my step-daughter is in Florida, but I'm going to share the only 2 pictures I could find of lunches I've been packing her for school.
I was getting really burnt out with sandwiches and trying to send the right amount of food so nothing went to waste. She is a really slow eater, so it's important to try to get a variety of healthy foods that she can finish in the time allowed.
I got tired of the thankless job of making healthy lunches for a picky eater. I felt so hurt when I found out a lot of the lunches I was putting time into making we're thrown away. So I decided I would have fun with making lunches and, hopefully, they would be more fun to eat!
I try to include a veggie, fruit, and some protein. I also try to make it fun and include a treat every now and then.
Different "Sandwiches" I've done
- Sandwich in wrap form
- Wrap cut in slices to make round disks
- PB&J "quesadilla"
- English muffin to build your own pizza with sauce, cheese, pepperoni
- PB&honey
We had some goldfish crackers to use up, so I decided to do a theme. If I had some cookie cutters it would have been really cute, but I made an attempt at a fish. :) I had some plain yogurt that I topped with blue sprinkles. I went through some ads and found a cute goldfish to cut out and added a little caption.
Not the absolute greatest execution, but it made it fun.
With the next lunch I took two sandwich quarters and turned them into the corners. I alternated cucumber, cheese, and carrots because it looks nice. Last, I lined it with pretzels.
These are some of my first attempts. I'm slowly collecting fun containers and tools. I just got some spring flower cookie cutters and bento boxes!
