As requested, I'm sharing this fabulous recipe for Spicy Pork Chops with Avocado Lime Sauce. It's already been pinned a couple times on Pinterest, so I figured I better get the recipe up soon!
I was searching through Pinterest for recipes for pork chops and I happened to have an avocado in the fridge that I forgot to use on taco night. This recipe was exactly what I was looking for! A healthy recipe too? It was my lucky day!
I found this fantastic recipe from taylor made by taylor bee. Check out her site for the full recipe. I was missing some of the ingredients and made some substitutions but they still turned out great!
Spicy Pork Chops with Avocado Lime Sauce
Ingredients
Pork Chops
4 Pork Chops
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/2 tsp jalapeño powder (the recipe called for chili powder but I didn't have any and happened to find jalapeño powder in my spice-addict husband's stash)
1/4 tsp paprika
1/4 tsp salt
1/4 tsp pepper
1 tbsp olive oil
Avocado Lime Sauce
1 ripe avocado
1/2 cup plain nonfat yogurt
1/4 cup almond milk
1 tbsp lime juice (maybe less, I just squirted my little faux lime into the bowl until I thought I had enough)
Salt and pepper to taste
Directions
1) Combine the cayenne, jalapeño powder, garlic powder, paprika, salt and pepper in a bowl. Rub over both sides of pork chops.
2) Heat the olive oil in a skillet over medium heat. Add pork chops and cook for about 5 minutes per side, or until browned and cooked through. Plate and tent with foil for 5-10 minutes before serving.
3) In a bowl, mash 1 avocado with a fork. Add in the yogurt and lime juice. combine ingredients and slowly whisk in almond milk until desired consistency is reached. Add salt and pepper to taste.
4) Plate pork chops on a ed of rice and peas and top with avocado cream sauce.
That's it! I didn't find them too spicy, so I might add a bit more jalapeño powder next time - maybe the chili powder is a little hotter - anyone know??
The sauce is to die for and helps tone it down if you do decide to add more spice. Remember, the capsaicin from hot peppers boosts metabolism by heating up the body and causing it to burn more calories. Anything that boosts my metabolism sounds good to me!
