Add your fillers. I happened to have some sausage patties and ham cut from a prior breakfast of omelets. I also added some bacon pieces.
Here come the famous onions. I love them in eggs, and they are so handy because they're already cut and frozen in a Parmesan cheese container.
Last is the cheese. I like the cheese to melt at the top, but adding it before the last of the egg didn't quite work out. To give the muffin a better look, add a bit more egg and save the cheese for the very last.
Cook for about 20 minutes, or until it appears the egg has set. I've never had any stick to the pan and they should come out beautifully.
Gorgeous! Let them cool and freeze for a quick delicious breakfast.

These look great! I'm going to figure out how to make these with under 100 calories and use one as a mid morning snack. That would be so satisfying! Yum!
ReplyDeleteGreat idea! I've done egg whites with broccoli and a bit of cheese too. I love mixing it up - these just happen to be a loaded version! :)
DeleteThose look really good. I have done it with just eggs but never thought to use the bread right in the tin. Great idea. And freezing them too??? Genius!
ReplyDeleteThank you!
DeleteThese look yummy! Great job!
ReplyDeleteThese look delicious! And sound so easy too.
ReplyDeleteThank you for stopping by my blog yesterday and for your sweet comment on our ceiling fan update :)
They are so easy!
DeleteNo problem - I'm going to start convincing my husband to help me transform our fan!
These look fantastic! I really need to do this. I've been on a smoothie kick lately - but this morning I spilled it all over the counter! Thanks for sharing!
ReplyDeleteOh no! :). These will be even quicker than a smoothie is you freeze them. Big tip - make sure they sit out and cool a bit before freezing or they will end up watery - it really helps to freeze them on a pan or plate first if you have room.
DeleteYum! these look delicious!
ReplyDeleteThank you!
DeleteWhat a delicious idea! Pinning this to my breakfast board.
ReplyDeleteHow sweet thank you!
DeleteSO EASY! I love this idea; I'm always the first one up around here... I bet the smell of these will get the kiddos out of bed in the morning!
ReplyDeleteWhat is the temp. you need to cook them at?
ReplyDeleteI do them at 375
DeleteThese were delicious. Thank you for posting this. My husband loved it too. We froze some, and it was a quick fix meal. Thank you again.
ReplyDeleteYou are so welcome! They are so easy to make and such a nice quick breakfast right out of the freezer!
Deletehow do you reheat the frozen muffins? Do you thaw them first or reheat frozen? Reheat in oven (temp and time) or microwave (power level and time)? Thanks.
ReplyDeleteI pop them right in the microwave - I give it 30 seconds and then flip them over for another 30. I'm never sure the wattage / power level of our microwave - just play around with it - they're pretty forgiving and they'll turn out great!
DeleteI clicked on your link for the "famous onions" but it was a broken link. I have never frozen onions, are you referring to green or yellow onions?
ReplyDeleteWow...I love how simple this can be. Will most definitely use it for a healthy breakfast or a snack for after workout. ~ Pang Ramkumar admin of healthactiv.com
