Turning lemons into lemonade

Or at least a failed attempt at Tzatziki into a super yummy dinner!



I can't say it was a complete failure, but I got nervous that it wouldn't be the same so we ended up purchasing some before we served our gyros last week for the baptism.

Then I had a huge container of my Tzatziki attempt (yogurt, cucumber, etc) and I needed to come up with a plan for it.

I started by straining the sauce to separate the cucumber bits from the runnier yogurt.



I used the strained yogurt as a marinade.



I had three enormous chicken breasts in the freezer that I thawed and cut into smaller pieces.  I stuck the chicken in the container and refrigerated for about 5 hours.



I then coated the chicken in a mix of Panko, Frying Magic, and some garlic powder. There's my favorite pan again!



I'm telling you, those chicken breasts were HUGE! I put them in the oven at 350 for about 30 min.



I used the remainder of the cucumber mix and made a salad a bit like a yummy one my mom always made. I cut up another cucumber in bigger pieces and opened a can of diced tomatoes - I would have used fresh if I had had some.

I dumped the tomatoes in a strainer and put the cucumbers on top. I salted the cucumbers lightly and let it hang out as I cut some onions.



I mixed it all together with the strained Tzatziki. Yum!



It turned out so good! I love not letting things go to waste!
