Hey all!
I may be crazy.
Not because I joined the Elf For Health Challenge, but because I joined while I am on vacation!
I didn't want to miss out, and most of the challenges are no problem at all! I also know that I can be a great motivator for someone else, and I'd love to meet more people.
Here's an outline of my week of challenges, and what I'm going to do to make myself as successful as possible.
This is quite possible the most difficult day of the week for me.
No, it's not hard to go meatless. I actually do it often and have an entire Pinterest board devoted to recipes for Meatless Monday.
The difficult part is that I'm on vacation. We've done a considerable amount of grocery shopping and are determined to have very little food waste. The problem is we bought way too much meat...
On the plan tomorrow is a Chicken Pasta Salad for lunch and a pork roast for dinner. Did I mention that we rented a boat and the pasta salad is prepared and easy to transfer? Also, we bought a huge pork loin at Sam's Club, so the pork roast is the remainder from the slab I cut chops out of. Larger than my desire to perfectly follow this challenge is my desire to not be wasteful and enjoy my vacation.
I'll see what I can do. We have lots of veggies to go along with both meals and I can make some adjustments for myself, especially if we end up canceling our boat trip due to weather.
I know I can be a great Elf for this one, though. I have a couple fantastic meatless recipes on the blog - I highly recommend my Black and White Bean Salad because you can easily get a variety of meals out of it - and I have the Meatless Monday Pinterest Board to share.
The suggestion is to clean out our inboxes and unsubscribe from any emails or catalogs we don't read.
Easy peasy. I've been doing this a lot lately, so I'll make a special point to go through my inbox(es) and clear away some more junk.
I'm really excited to see if my Elf - Denise by the way, check her out! - has any great suggestions here...
As we all know, I'm not particularly knowledgable about workouts and tend to get my activity from the kiddos and the occasional run. I think I'm going to suggest 300s - this is a super fast workout doing a pyramid to get you to 300 squats, wall push-ups, and jumping jacks. Start with one of each, then two of each, and so on all the way up to ten of each, and then you work your way back down to one.
That's about it for me... It's my quick and easy go-to when I feel like I should do something.
I'm not much of a "caller" and all my friends know this about me. I have three very close friends that live from one coast to the other, and I think I'm going to take the time to write them each a meaningful message about how much they mean to me.
Now that I think about it, a postcard from Sunny Florida would be even better!

This is a good one! I have a huge water bottle that I fill constantly, but I never quite feel like I hit my goal.
My plan is to carry that thing with me all over the place. Set a timer? Use an app? Whatever it takes and post periodically about my progress. I plan to rock this one! I may even get the kiddos in on it and keep their adorable little water bottles out with mine.
I'm going to go rogue on these last two.
Vacation plans make this a must. We are checking out of our awesome house on Sunday morning and driving up to Disney World. I'm thinking the 100 Burpees would be pretty difficult that day. Also, how great would it be to treat myself to something at Disney World after completing 100 Burpees!?! So, plans changed there!
Alright, that's the plan for the week! I may be a little crazy for starting this while on vacation, but it's a great extra bit of incentive not to go overboard just for the sake of being on vacation.

ReplyDeleteLove this I tried doing meatless once a week my normal meatless day is usually on Saturdays. I opt for a salad or a grilled cheese and normally do good. These are some great challenges and I may have to join in and do at least one of them. Stopping over from SITS
